    Prepare the Ingredients

    Start by cutting the pork shoulder into large chunks. Slice the chorizo into thick pieces. Peel and dice the potatoes into cubes. Chop the onion and garlic finely. Dice the red bell pepper and slice the carrots.

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, and diced red bell pepper. Sauté for about 5 minutes, or until the onion becomes translucent.

    Brown the Pork

    Increase the heat to medium-high and add the pork shoulder pieces to the pot. Cook for about 8-10 minutes until they are browned on all sides.

    Add Chorizo and Vegetables

    Add the slices of chorizo, potatoes, carrots, and spices (paprika, salt, black pepper, bay leaves, and thyme). Stir well to mix everything together.

    Pour in the red wine and scrape the bottom of the pot to release any browned bits. Allow it to simmer for 2-3 minutes.

    Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 1.5 hours, or until the pork is tender.
