Cooking the Rice

    Rinse the Rice

    In a fine mesh strainer, rinse the basmati rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    In a medium pot, combine the rinsed rice, 3 cups of water, and 0.5 tsp of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes or until the rice is tender and water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Preparing the Spiced Meat Mixture

    Sauté Onions and Garlic

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and sauté for about 5 minutes until translucent. Add the minced garlic and cook for another minute.

    Cook the Meat

    Add the ground lamb or beef to the skillet. Break it apart with a spatula and cook until browned, about 6-8 minutes.

    Season the Meat

    Stir in allspice, cinnamon, cumin, 0.5 tsp of salt, and 0.25 tsp of pepper. Cook for an additional 2 minutes until the spices are well incorporated.

Assembling and Serving

    Toast the Pine Nuts

    In a small dry skillet over medium heat, toast the pine nuts for about 3-5 minutes or until golden brown, stirring frequently to avoid burning.

    Combine and Plate

    Fluff the cooked rice with a fork and place it on a serving platter. Top with the spiced meat mixture, toasted pine nuts, and chopped parsley. Serve with lemon wedges on the side.
