Prepare the Pork
Trim excess fat from the pork shoulder and cut it into large chunks.

Marinate
Place the seasoned pork in a large bowl, cover it with plastic wrap, and let it marinate in the refrigerator for at least 4 hours, preferably overnight.

Preheat the Oven
Preheat your oven to 160°C (320°F).

Brown the Meat
In a large Dutch oven, heat olive oil over medium-high heat. Add the marinated pork chunks and brown them on all sides. Remove the pork and set it aside.

Add the Pork and Marinade
Return the browned pork to the pot with the vegetables. Pour in the white wine and add bay leaves and thyme. Stir to combine.

Cover the pot and place it in the preheated oven. Bake for about 2 hours or until the pork is tender and cooked through.

Remove the pot from the oven, discard the bay leaves, and let the dish rest for 10 minutes. Serve the Bairrada hot with the cooked vegetables.
