For Bacon-Wrapped Dates

Preheat the Oven
Preheat your oven to 200°C (390°F).

Prepare the Dates
Using a sharp knife, make a small slit in each Medjool date and remove the pit.

Stuff the Dates
Fill each date with about 1 tsp of Valdéon cheese.

Wrap with Bacon
Cut each bacon slice in half and wrap each stuffed date with a piece of bacon, securing it with a toothpick if necessary.

Season
Sprinkle fresh rosemary and black pepper over the wrapped dates.

Bake
Place the bacon-wrapped dates on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until the bacon is crispy.
For Valdéon Mousse

Prepare the Ingredients
Gather Valdéon cheese, cream cheese, heavy cream, garlic clove, lemon juice, and salt.

Blend Mousse
In a mixing bowl, combine Valdéon cheese, cream cheese, and heavy cream. Use a hand mixer or a food processor to blend until smooth.

Add Flavor
Mince the garlic clove and add it to the mixture, along with lemon juice and salt to taste. Blend again until well combined.

Chill the Mousse
Transfer the mousse to a serving bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
