    Rinse the Rice

    In a strainer, rinse the basmati rice under cold water until the water runs clear. This helps to remove excess starch.

    Soak the Saffron

    In a small bowl, soak the saffron threads in 2 tablespoons of warm water to release their flavor and color.

Cooking

    Sauté Aromatics

    In a large pot, heat olive oil over medium heat. Add chopped onion and garlic. Sauté until the onion becomes translucent, about 5 minutes.

    Add Vegetables

    Stir in the diced red bell pepper, zucchini, and chopped tomatoes. Cook for an additional 5-7 minutes, until the vegetables are softened.

    Combine Rice and Spices

    Add the rinsed basmati rice to the pot. Stir in paprika, cumin, salt, and black pepper to taste. Mix well to combine all ingredients.

    Add Broth and Saffron

    Pour in the vegetable broth and the saffron mixture (including the water). Bring to a boil, then reduce heat to low.

    Cover the pot and let it simmer for 15-20 minutes, or until the rice is tender and has absorbed the liquid.

    Fluff the Rice

    Once cooked, remove the pot from heat. Let it sit covered for 5 minutes, then fluff the rice gently with a fork.
