Preparation

    Prepare the Pork

    Trim excess fat from the pork shoulder and cut it into large chunks.

    Chop Vegetables

    Dice the onion and mince the garlic cloves.

    Prepare Chipotle Peppers

    Chop the chipotle peppers finely, making sure to include some of the adobo sauce for added flavor.

Cooking

    Sear the Pork

    In a large pot or Dutch oven, heat a tablespoon of oil over medium-high heat. Add the pork chunks in batches, searing on all sides until browned. Remove and set aside.

    Sauté Onions and Garlic

    In the same pot, add the diced onion and sauté for about 5 minutes until translucent. Add the minced garlic and sauté for an additional minute until fragrant.

    Combine Ingredients

    Return the seared pork to the pot. Add the canned tomatoes, chicken broth, chipotle peppers, cumin, paprika, oregano, salt, and black pepper. Stir well to combine.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for about 2 to 3 hours, until the pork is tender and easily shredded with a fork.

    Shred the Pork

    Once the pork is tender, remove it from the pot and shred it using two forks. Return the shredded pork back into the pot and mix well.

Serving

    Ladle the pork mixture into bowls. Garnish with fresh cilantro and serve with lime wedges on the side.
