Preparation

  1. 1

    Prepare the Ingredients

Chop the onion and garlic finely. Slice the pork belly and smoked sausage into bite-sized pieces. Peel and cut the potatoes into cubes.

Cooking

  1. 2

    Sauté the Onions and Garlic

In a large pot, heat some oil over medium heat. Add the chopped onion and garlic, and sauté until they are soft and translucent.

  2. 3

    Brown the Meat

Add the pork belly to the pot and cook until it starts to brown. Then add the smoked sausage and cook for an additional 5 minutes.

  3. 4

    Add Sauerkraut and Seasonings

Stir in the sauerkraut, white wine, caraway seeds, bay leaf, salt, and black pepper. Mix well.

  4. 5

    Simmer the Dish

Cover the pot and let it simmer on low heat for about 30 minutes, allowing all flavors to meld together.

  5. 6

    Cook the Potatoes

In a separate pot, boil the cubed potatoes until fork-tender. Drain and set aside.

  6. 7

    Combine and Serve

Once the sauerkraut mixture has simmered, add the boiled potatoes to the pot. Stir gently to combine and heat through before serving.
