Main Ingredients

Method

Preparation

  1. 1

    Sauté the Aromatics

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

  2. 2

    Add Garlic and Vegetables

Stir in the minced garlic, diced bell pepper, carrots, and celery. Cook for an additional 5-7 minutes, until the vegetables are softened.

  3. 3

    Cook the Chorizo

Add the sliced chorizo sausage to the pot and cook for another 5 minutes, stirring occasionally, until the sausage is browned.

  4. 4

    Combine Ingredients

Pour in the crushed tomatoes and vegetable broth, followed by the drained chickpeas. Stir well to combine all the ingredients.

  5. 5

    Season the Stew

Add salt, black pepper, and paprika. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 20 minutes.

  6. 6

    Add Spinach

Stir in the fresh spinach and let it wilt for about 3-4 minutes.

  7. 7

    Garnish and Serve

Taste and adjust seasoning if necessary. Serve hot, garnished with chopped fresh parsley.
