Mix in the cooked black beans and stir until well combined. Allow to cook for an additional 2-3 minutes to heat through.
Stuffing and Baking

Stuff the Peppers
Carefully stuff each Aylin Chile pepper with the beef and bean mixture, pressing down gently to ensure they are filled.

Preheat your oven to 180°C (350°F). Arrange the stuffed peppers in a baking dish and cover with foil. Bake for 25-30 minutes.

Once baked, remove the foil and sprinkle shredded cheese on top of each pepper. Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly. Serve with a dollop of sour cream, fresh cilantro, and lime wedges on the side.
