Cake and Pudding

Method

Preparation

  1. 1

    Bake the Vanilla Cake

Preheat the oven to 350°F (175°C). In a mixing bowl, combine flour, sugar, baking powder, and salt. In another bowl, cream the softened butter and add eggs one at a time, mixing well. Stir in vanilla extract and milk. Gradually add the dry ingredients to the wet mixture and mix until just combined. Pour into a greased 9x13 inch baking pan and bake for 25-30 minutes or until a toothpick comes out clean. Let the cake cool completely.

  2. 2

    Prepare the Pudding Layer

In a medium bowl, whisk together the vanilla pudding mix and 2 cups of milk until thickened. Once the cake is cooled, spread the pudding evenly over the top of the cake.

  3. 3

    Soak the Cake

In a bowl, mix together evaporated milk and sweetened condensed milk. Poke holes in the cake with a fork and slowly drizzle the milk mixture over the cake, allowing it to soak in.

  4. 4

    Make the Whipped Cream

In a large mixing bowl, beat the heavy cream and powdered sugar until soft peaks form. Spread the whipped cream over the soaked cake.

  5. 5

    Add Berry Topping

Top the whipped cream with fresh wild berries. Serve chilled.
