    Prepare the Potatoes

    Preheat your oven to 425°F (220°C). Wash and dice the red potatoes into bite-sized pieces, leaving the skin on.

    Season the Potatoes

    In a large bowl, toss the diced potatoes with olive oil, smoked paprika, garlic powder, salt, black pepper, chili powder, and cayenne pepper until evenly coated.

    Roast the Potatoes

    Spread the seasoned potatoes on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, or until they are golden brown and crispy, stirring halfway through.

    Prepare the Blue Cheese

    While the potatoes are roasting, crumble the blue cheese and chop the fresh parsley.

    Serve

    Once the potatoes are done, remove them from the oven and let them cool slightly. Serve hot, topped with crumbled blue cheese and garnished with fresh parsley.
