Prepare the Salmon
Season the salmon fillets with salt and black pepper on both sides.

Sear the Salmon
In a large skillet, heat olive oil over medium-high heat. Add the salmon fillets and cook for 4-5 minutes on each side, or until golden brown and cooked through. Remove and set aside.

Make the Sauce
In the same skillet, add minced garlic and sauté until fragrant. Then, add the diced tomatoes and cook for about 3 minutes until they start to soften.

Add Spinach and Beans
Stir in the fresh spinach and white beans, cooking until the spinach wilts.

Deglaze with Wine
Pour in the white wine and lemon juice, stirring to combine. Let simmer for 5 minutes to reduce slightly.

Combine and Serve
Return the salmon to the skillet, spooning the sauce over the fillets. Serve the salmon with cooked rice and mixed vegetables on the side.
