Cooking Instructions

  1. 1

    Prepare the Snapper

Season the red snapper fillets with salt and pepper on both sides.

  2. 2

    Sear the Snapper

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the snapper fillets and sear for about 3-4 minutes on each side until golden brown. Remove from the skillet and set aside.

  3. 3

    Sauté the Vegetables

In the same skillet, add the remaining olive oil and sauté the minced garlic until fragrant. Add the diced tomatoes, capers, black olives, and green olives. Cook for about 5 minutes until the tomatoes soften.

  4. 4

    Add Seafood and Wine

Add the mussels and clams to the skillet. Pour in the white wine and bring to a simmer. Cover the skillet and cook for about 5-7 minutes until the mussels and clams open.

  5. 5

    Combine and Serve

Return the seared snapper to the skillet, spooning the sauce over the fish. Cook for an additional 2-3 minutes to heat through. Serve with rice and vegetables.
