Prepare the Filet Mignon
Season the filet mignon pieces with salt and black pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Sear the filets for 3-4 minutes on each side, or until desired doneness. Remove from heat and let rest.

Make the Sauce
In the same skillet, add the remaining tablespoon of olive oil and minced garlic. Sauté for 1 minute until fragrant. Add the roasted red peppers and cook for another 2 minutes. Pour in the rioja red wine and bring to a simmer, allowing it to reduce by half, about 5-7 minutes.
