Prepare the Ingredients
Gather all the ingredients and prepare them by chopping the vegetables and slicing the chorizo.

Sauté the Chicken and Chorizo
In a large paella pan or skillet, heat the olive oil over medium heat. Add the chicken thighs and chorizo. Cook until the chicken is browned on all sides, about 5-7 minutes. Remove and set aside.

Add Rice and Spices
Stir in the rice, saffron, paprika, salt, and black pepper. Cook for 2 minutes, stirring frequently.

Add Broth and Chicken
Pour in the chicken broth and return the chicken and chorizo to the pan. Bring to a simmer.

Cook the Paella
Reduce the heat to low and cover the pan. Let it cook for about 20 minutes, or until the rice is tender and has absorbed most of the liquid. If needed, add more broth or water.

Add Peas
In the last 5 minutes of cooking, sprinkle the frozen peas over the top. Cover and let steam.

Serve
Remove from heat, let it rest for a few minutes, then fluff the rice with a fork and serve hot.
