Prepare the Cutlets
Begin by flattening the chicken or veal cutlets to an even thickness using a meat mallet. Season both sides with salt and black pepper.

Cook the Cutlets
In a large skillet, heat olive oil over medium heat. Add the breaded cutlets and cook until golden brown and cooked through, about 3-4 minutes per side. Remove from the skillet and set aside.

Finish the Sauce
Stir in the heavy cream and let the sauce simmer for another 5 minutes until it thickens. Season with salt and black pepper to taste.

Cook the Linguini
Meanwhile, cook the linguini according to package instructions until al dente. Drain and set aside.

Combine and Serve
Toss the cooked linguini in the sauce until well coated. Serve the sauced linguini on plates topped with the cooked cutlets. Garnish with chopped parsley.
