Cook the Pasta
In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

Sauté the Chicken
In a large skillet, heat olive oil over medium heat. Add diced chicken breasts, season with salt and black pepper, and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.

Prepare the Sauce
In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Add the sun-dried tomatoes and fresh tomatoes; cook for 3-4 minutes until softened. Pour in the vodka and let it simmer for about 5 minutes to reduce slightly.

Combine Ingredients
Reduce heat to low, stir in the heavy cream and Parmesan cheese, mixing until smooth. Add the cooked chicken back into the skillet, stirring to combine. Season with more salt and pepper if necessary.

Mix with Pasta
Add the cooked penne pasta to the skillet with the sauce and toss to coat evenly. Cook for an additional 2-3 minutes to heat through.

Garnish with chopped basil and additional Parmesan cheese if desired. Serve hot.
