    Prepare the Rice

    In a pot, combine 1 cup of rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked and water is absorbed.

    Cook the Vegetables

    In a separate pot, steam or boil the mixed vegetables for about 5-7 minutes until tender. Drain and set aside.

    Prepare the Garlic and Sauce

    In a small pan, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Stir in sun-dried tomatoes and cook for another 2 minutes. Add the heavy cream, salt, and pepper, and bring to a simmer. Reduce heat and let it thicken slightly, about 5 minutes. Set aside.

    Cook the Tilapia

    Rub the tilapia fillets with the remaining olive oil and Cajun seasoning. Heat a large skillet over medium-high heat. Add the tilapia fillets and sear for about 3-4 minutes on each side until cooked through and blackened.

    Plate the blackened tilapia, drizzle with the roasted garlic sun-dried tomato cream sauce, and serve alongside the cooked rice and vegetables.
