Prepare Balsamic Reduction
In a small saucepan, bring balsamic vinegar to a boil. Reduce heat to low and simmer until the liquid has reduced by half and is slightly thickened, about 10-15 minutes. Remove from heat and let it cool.

Sauté Vegetables
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add the artichoke hearts and roasted red peppers, cooking for 5-7 minutes until heated through.

Add Spinach and Cheese
Stir in fresh spinach and cook until wilted, about 2-3 minutes. Crumble the goat cheese over the top and allow it to melt slightly.

Season and Serve
Season with salt and black pepper to taste. Drizzle the balsamic reduction over the sautéed mixture and serve warm.
