Preparation of Filling

Chop Vegetables
Finely chop the cabbage, carrot, and red bell pepper into small pieces.

Mix Filling
In a large bowl, combine chopped cabbage, carrot, red bell pepper, bean sprouts, and sliced green onion. Add minced garlic, soy sauce, and sesame oil. Mix well until all ingredients are evenly coated.
Wrapping

Prepare Wrappers
In a small bowl, mix cornstarch with water to create a paste. This will be used to seal the spring roll wrappers.

Fill Wrappers
Take one spring roll wrapper and place about 2 tablespoons of the filling mixture near the bottom edge. Fold the sides in and roll it up tightly. Use the cornstarch paste to seal the edge of the wrapper.

Repeat
Repeat the filling and rolling process for all wrappers until the filling is used up.
Frying

Heat Oil
In a large frying pan or deep fryer, heat vegetable oil over medium-high heat until hot.

Fry Spring Rolls
Carefully place the rolled spring rolls into the hot oil, a few at a time, avoiding overcrowding the pan. Fry for about 3-4 minutes or until golden brown and crispy, turning occasionally.

Drain
Once fried, remove the spring rolls and place them on paper towels to drain excess oil.
