Dough Preparation

    Activate Yeast

    In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

    Make Dough

    In a large mixing bowl, whisk together the flour, baking powder, and salt. Once the yeast mixture is frothy, pour it into the dry ingredients. Mix until a dough forms.

    Knead Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes, until smooth and elastic.

    First Rise

    Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Pork Filling Preparation

    Mix Filling

    In a large bowl, combine ground pork, minced garlic, minced ginger, soy sauce, sriracha sauce, chopped green onions, sesame oil, black pepper, red pepper flakes, and salt. Mix thoroughly until well combined.

    Cover the pork mixture and refrigerate for at least 30 minutes to allow the flavors to meld.

Assemble and Cook

    Shape Buns

    Once the dough has risen, punch it down and divide it into 12 equal portions. Roll each portion into a ball and then flatten it into a circle about 4 inches in diameter.

    Fill Buns

    Place a tablespoon of the pork filling in the center of each circle. Gather the edges of the dough and pinch to seal the filling inside.

    Place the filled buns on parchment paper squares and let them rise for another 30 minutes.
