Prepare the Mixture
In a food processor, combine the shrimp, tapioca flour, rice flour, salt, and water. Blend until you achieve a smooth paste.

Shape the Chips
Spread the shrimp mixture onto a baking sheet lined with parchment paper, approximately 1/4 inch thick. Allow to dry for at least 2 hours or until completely hardened.

Cut and Fry
Once dried, cut the mixture into desired chip shapes. Heat the vegetable oil in a deep pan over medium heat. Fry the chips in batches, cooking until they puff up and turn golden brown, about 3-5 minutes per batch.

Drain and Cool
Remove the chips from the oil using a slotted spoon and place them on paper towels to drain excess oil. Allow to cool completely before serving.
Sweet Chili Sauce

Prepare the Sauce
In a small bowl, combine the sweet chili sauce, lime juice, finely minced garlic, and water. Stir well until mixed.

Serve
Transfer the sauce to a serving bowl and serve alongside the crispy shrimp chips.
