Method

Pulled Pork

  1. 1

    Prepare the Pork

In a mixing bowl, combine the brown sugar, paprika, cumin, salt, and black pepper. Rub this mixture all over the pork shoulder.

  2. 2

    Sear the Pork

In a large skillet, heat olive oil over medium-high heat. Add the pork shoulder and sear on all sides until browned, about 4-5 minutes per side.

  3. 3

    Slow Cook

Transfer the seared pork to a slow cooker. Add chopped onion, minced garlic, and chicken broth. Cook on low for 8 hours or until the pork is tender and easily shredded.

  4. 4

    Shred the Pork

Once cooked, shred the pork using two forks and stir it back into the juices.

Spicy Mayo

  1. 5

    Mix the Spicy Mayo

In a small bowl, combine mayonnaise, sriracha sauce, lime juice, and garlic powder. Mix well until smooth. Adjust spiciness to your preference.

Bao Buns

  1. 6

    Prepare the Dough

In a large bowl, combine all-purpose flour, instant yeast, sugar, and salt. Gradually add warm water and mix until a dough forms.

  2. 7

    Knead the Dough

Knead the dough on a floured surface for about 5-7 minutes until smooth. Place it in a greased bowl, cover with a damp cloth, and let it rise for 1 hour or until doubled in size.

  3. 8

    Shape the Buns

After the dough has risen, punch it down and divide it into small balls (about the size of a golf ball). Roll each ball into an oval and fold it in half. Place on a parchment-lined steamer basket.

  4. 9

    Steam the Buns

Steam the buns in a steamer for about 10-15 minutes until fluffy and cooked through.

Assemble

  1. 10

    Assemble the Bao

Place a generous amount of pulled pork inside each bao bun. Drizzle with spicy mayo and top with fresh cilantro. Serve warm.
