Prepare the Mochi Dough

Microwave the Mixture
Cover the bowl with plastic wrap, leaving a small opening for steam to escape. Microwave on high for 1 minute. Remove and stir. Microwave for another 1 minute, then stir again. Microwave for a final 30 seconds until the dough is translucent and slightly sticky.

Cool the Dough
Let the mochi dough cool for 10-15 minutes until it is manageable but still warm.

Prepare the Cornstarch
While the dough is cooling, sprinkle a clean surface with cornstarch to prevent sticking.
Form the Mochi

Divide the Dough
Once the mochi dough is cool enough to handle, dust your hands with cornstarch. Divide the dough into equal portions (about 1.5-2 tablespoons each).

Shape the Mochi
Flatten each portion of mochi dough in your palm. Place about 1 tablespoon of ice cream in the center of the flattened dough. Carefully stretch the edges of the dough over the ice cream to completely encase it, pinching to seal.

Dust with Cornstarch
Roll the mochi ball in cornstarch to prevent sticking and place on a parchment-lined tray.
