Method
Preparing the Rice
- 1
Soak the Rice
In a bowl, rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours, or preferably overnight.
- 2
Cook the Rice
Drain the soaked rice and place it in a steamer lined with cheesecloth. Steam the rice over simmering water for about 30-40 minutes, or until tender and sticky.
Making the Coconut Sauce
- 3
Combine Ingredients
In a saucepan, combine the coconut milk, sugar, and salt. Cook over low heat, stirring until the sugar dissolves. Do not let it boil.
- 4
Mix with Rice
Once the rice is cooked, transfer it to a mixing bowl and pour about 3/4 of the coconut sauce over the warm rice. Stir gently until well combined. Let it sit for 15 minutes to allow the rice to absorb the flavors.
Preparing the Mango
- 5
Slice the Mango
Peel the ripe mangoes and slice them into thin strips or wedges.
Serving
- 6
Plate the Dish
Serve the sticky rice on a plate, arrange the mango slices next to it, and drizzle the remaining coconut sauce on top. Garnish with sesame seeds or mung beans.
