Preparation of Pudding

    Prepare the Mango Puree

    Peel and chop the ripe mangoes into small pieces. Blend them in a blender until smooth to obtain 2 cups of mango puree.

    Combine Ingredients

    In a saucepan, combine the mango puree, coconut milk, sugar, cornstarch, vanilla extract, and a pinch of salt. Stir well to mix all the ingredients.

    Cook the Mixture

    Place the saucepan over medium heat. Continuously stir the mixture until it starts to thicken and bubble, about 5-7 minutes.

    Cool the Pudding

    Once thickened, remove the saucepan from heat and let it cool for about 10 minutes. Then, pour the pudding into serving dishes or bowls.

    Refrigerate

    Cover the pudding with plastic wrap and refrigerate for at least 2 hours, or until it is fully set.

Topping

    Prepare the Fresh Mango

    While the pudding is chilling, peel and chop the fresh mango into small cubes to use as a topping.

    Garnish with Mint

    Once the pudding is set, remove it from the refrigerator. Top each serving with chopped fresh mango and garnish with mint leaves.
