    Prepare the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Gradually add water while mixing until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

Dumpling Filling

    Make the Filling

    In a bowl, combine ground pork (or chicken), chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are fully incorporated.

Assembling Dumplings

    Fill the Dumplings

    After the dough has rested, divide it into small balls (about the size of a golf ball). Roll each ball into a thin circle (about 3 inches in diameter). Place a tablespoon of the filling in the center of each circle, then fold the dough over to create a half-moon shape. Pinch the edges to seal securely.

Frying Dumplings

    Fry the Dumplings

    In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the dumplings in batches, being careful not to overcrowd the pan. Fry for about 2-3 minutes on one side until golden brown, then flip and add a splash of water (about 1/4 cup) to the pan. Cover immediately to steam the dumplings for about 4-5 minutes. Remove the lid and allow the dumplings to crisp up for an additional 2 minutes.

    Prepare the Dipping Sauce

    In a small bowl, whisk together soy sauce, rice vinegar, chili oil, minced garlic, and sugar until the sugar is dissolved. Adjust seasoning to taste.
