Method
Preparing Chicken Katsu

Prepare Chicken
Season the chicken breasts with salt and black pepper on both sides.

Coating Process
Dredge each piece of chicken in all-purpose flour, shaking off the excess. Dip into beaten eggs, ensuring they are fully coated. Finally, coat with panko breadcrumbs, pressing gently to adhere.

Frying Chicken
In a large pan, heat vegetable oil over medium heat. Once hot, add the breaded chicken and fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Adding Water and Curry Roux
Pour in the water and bring to a boil. Once boiling, reduce heat and add the Japanese curry roux. Stir until dissolved.

Simmering Sauce
Let the curry simmer for about 15-20 minutes, or until the vegetables are tender. Stir occasionally.

Finishing Touches
Stir in soy sauce and sugar, adjusting seasoning to taste.
Serving

Plating
On each plate, serve a portion of cooked rice. Slice the chicken katsu and place it next to the rice. Generously ladle the hot curry sauce over the chicken.

Sprinkle with chopped green onions for garnish before serving.
