Broth Preparation

    Prepare the Ingredients

    Start by cutting the beef shank into large chunks. Peel and quarter the onion, and crush the garlic cloves. Slice the ginger into thin pieces.

    Brown the Meat

    In a large pot, add the beef shank and beef bones. Brown the meat on medium-high heat for about 5-7 minutes until it is well-seared.

    Add Aromatics

    Add the quartered onion, crushed garlic, sliced ginger, star anise, and cinnamon stick to the pot. Stir for 2-3 minutes until fragrant.

    Simmer the Broth

    Pour in 8 cups of water and bring to a boil. Lower the heat to a simmer, cover, and cook for 2-3 hours until the beef is tender.

    Season the Broth

    After the broth has simmered, add soy sauce, salt, and black pepper to taste. Adjust seasoning as needed.

    Strain the Broth

    Once the beef is tender, strain the broth through a fine-mesh sieve into a clean pot. Discard the solids and return the broth to the heat.

Noodle and Garnish Preparation

    In a separate pot, bring water to a boil and cook the egg noodles according to package instructions. Drain and set aside.

    Chop the green onions and rinse the bean sprouts. Cut the lime into wedges.

Assembly

    In serving bowls, place a portion of egg noodles. Ladle the hot beef broth over the noodles. Top with green onions, cilantro, and bean sprouts. Squeeze fresh lime juice on top before serving.
