Broth Preparation

    Prepare the Beef Broth

    In a large pot, add the beef bones and cover them with 3 liters of water. Bring it to a boil over high heat.

    Add Aromatics

    Once boiling, reduce the heat to medium-low. Add the onion (peeled and quartered), garlic (crushed), ginger, star anise, cinnamon stick, soy sauce, salt, and black peppercorns to the pot.

    Simmer

    Cover the pot and let it simmer for about 2-3 hours, skimming off any foam that rises to the top.

    Strain the Broth

    After simmering, strain the broth through a fine mesh sieve to remove the solids. Discard the solids and return the broth to the pot.

Noodle Preparation and Serving

    Cook the Noodles

    In a separate pot, bring water to a boil and cook the rice noodles according to package instructions (usually about 4-6 minutes). Drain and set aside.

    Prepare the Toppings

    While the noodles are cooking, chop the fresh cilantro, slice the green onions, and cut the lime into wedges.

    Assemble the Soup

    In deep bowls, place a portion of cooked noodles, ladle the hot beef broth over the noodles, and top with cilantro, green onions, and a squeeze of lime. Add chili paste to taste.

    Serve

    Serve immediately while hot, allowing each person to adjust the chili paste according to their preference.
