Melt the Chocolate
Chop the dark chocolate into small pieces and place it in a heatproof bowl. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Pour the hot cream over the chocolate and let it sit for 2 minutes to melt.

Combine Ingredients
Once the chocolate is melted, stir gently until smooth. Then, add the unsalted butter and mix until fully incorporated. Chop the brandied apricots into small pieces and fold them into the chocolate mixture along with the powdered sugar.

Chill the Mixture
Cover the bowl with plastic wrap and refrigerate for about 1 hour, or until the mixture is firm enough to handle.
Truffle Shaping

Form the Truffles
Once the mixture is firm, use a small ice cream scoop or your hands to form small balls (about 1 inch in diameter) and place them on a lined baking sheet.

Coat the Truffles
Roll the truffle balls in cocoa powder or chopped nuts to coat evenly. Return the coated truffles to the baking sheet.

Chill Again
Chill the truffles in the refrigerator for another 30 minutes to set the coating.

Once set, place the truffles in decorative gift boxes for serving or gifting. They can be stored in the refrigerator for up to 2 weeks.
