Preparation of Seafood

    Blackening the Tuna

    Preheat a skillet over medium-high heat. Rub the Big Eye Tuna with olive oil and Cajun seasoning. Once the skillet is hot, sear the tuna for about 1-2 minutes on each side until a blackened crust forms. Remove from heat and let it rest for a few minutes, then slice into thin strips.

    Cooking the Shrimp

    In the same skillet, add a little more olive oil if needed. Sauté the Key West Pink Shrimp for about 3-4 minutes or until they are pink and opaque. Remove from heat and set aside.

    Layering the Nachos

    On a large serving platter, spread out the tortilla chips. Evenly distribute the blackened tuna, sautéed shrimp, and crabmeat over the chips.

    Adding Cheese

    Sprinkle the Monterey Jack cheese generously over the seafood and chips. You can optionally place the platter under a broiler for 2-3 minutes until the cheese is melted and bubbly.

    Final Touches

    Top the nachos with dollops of guacamole, spoonfuls of pico de gallo, and drizzle the chipotle salsa verde over the top.
