Preparation of Crab Claws

Boil the Water
In a large pot, bring 4 quarts of water to a rolling boil over high heat.

Add Salt
Once the water is boiling, add 1 tablespoon of salt to the pot.

Cook the Crab Claws
Carefully add the Florida stone crab claws to the boiling water. Boil for 5-7 minutes until heated through.

Drain and Cool
Remove the crab claws using tongs and place them in a colander to drain. Let them cool slightly before serving.

Combine Ingredients
In a mixing bowl, combine 1 cup of mayonnaise, 2 tablespoons of Dijon mustard, 2 tablespoons of key lime juice, 1 teaspoon of garlic powder, 1 teaspoon of salt, and 1 teaspoon of black pepper.

Whisk Together
Using a whisk, mix all the ingredients together until smooth and well combined.

Taste and Adjust
Taste the sauce and adjust seasoning if needed, adding more salt or lime juice to suit your preference.
