Method

Preparation

  1. 1

    Cook the Pasta

In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

Cooking the Vegetables

  1. 2

    Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the bell peppers, zucchini, carrots, and broccoli florets. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are tender but still crisp.

  2. 3

    Add Cherry Tomatoes

Stir in the cherry tomatoes and cook for an additional 2-3 minutes until they begin to soften.

Making the Sauce

  1. 4

    Prepare the Sauce

Pour in the vegetable broth and lemon juice into the skillet with the sautéed vegetables. Season with salt and black pepper to taste. Let the mixture simmer for 2-3 minutes, allowing the flavors to meld.

Combining Ingredients

  1. 5

    Toss Pasta and Sauce

Add the cooked pasta to the skillet with the vegetable sauce. Toss everything together gently until the pasta is well coated with the sauce and vegetables. If the mixture seems dry, add a bit more vegetable broth.

  2. 6

    Serve

Remove from heat and sprinkle with grated Parmesan cheese before serving. Enjoy your Pasta Primavera warm!
