Pasta and Clams

Method

Cooking Instructions

  1. 1

    Prepare the Pasta

In a large pot, bring salted water to a boil. Add the capellini pasta and cook according to package instructions until al dente, usually about 4-5 minutes. Once cooked, reserve 1 cup of pasta water and drain the rest. Set the pasta aside.

  2. 2

    Cook the Clams

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then, add the fresh clams to the skillet and cover it with a lid. Cook for about 5-7 minutes, or until the clams open up. Discard any clams that do not open.

  3. 3

    Add Tomatoes and Seasoning

Once the clams are cooked, add the halved cherry tomatoes to the skillet. Stir in the chopped parsley, crushed red pepper flakes, salt, and black pepper. Cook for an additional 2-3 minutes until the tomatoes soften.

  4. 4

    Combine Pasta and Clams

Add the cooked capellini to the skillet with the clam mixture. Toss everything together, adding reserved pasta water a little at a time to achieve desired consistency. Ensure the pasta is well coated with the sauce.

  5. 5

    Serve

Plate the parcels pasta and sprinkle generously with grated Parmesan Reggiano. Garnish with extra parsley if desired and serve immediately.
