Spread a layer of rock salt evenly on a serving plate. This will help stabilize the oysters and prevent them from tipping over.

Shuck the Oysters
Using an oyster knife, carefully insert the blade into the hinge of each oyster. Twist the knife to pop open the shell and slide the knife along the top shell to cut the muscle. Remove the top shell and ensure the oyster remains in the bottom shell with its juices.

Place the shucked oysters on the prepared plate, resting them on the rock salt to keep them steady.

Add Hot Sauce (Optional)
