French Fries

Lemon Pepper Aioli

Method

Prepare Mussels

  1. 1

    Clean the Mussels

Rinse the fresh mussels under cold water, scrubbing the shells with a brush to remove any dirt or sand. Remove the beards.

  2. 2

    Sauté Aromatics

In a large pot, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and chopped shallots, cooking until fragrant and translucent, about 3-4 minutes.

  3. 3

    Cook Mussels

Add the cleaned mussels to the pot along with 1 cup of white wine, salt, and black pepper. Cover and steam for about 5-7 minutes, or until the mussels open. Discard any that do not open.

  4. 4

    Garnish

Chop fresh parsley and sprinkle over the mussels before serving.

Prepare French Fries

  1. 5

    Cut Potatoes

Peel and cut the russet potatoes into thin strips to create shoe-string fries.

  2. 6

    Soak Potatoes

Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

  3. 7

    Heat Oil

In a large pot or deep fryer, heat 4 cups of vegetable oil to 350°F (175°C).

  4. 8

    Fry Potatoes

Drain and pat dry the soaked potatoes. Fry them in batches for about 4-5 minutes, or until golden brown and crispy. Remove and drain on paper towels.

  5. 9

    Season

Sprinkle salt over the fries while still hot, to taste.

Make Lemon Pepper Aioli

  1. 10

    Combine Ingredients

In a small bowl, mix together 1 cup of mayonnaise, 2 tablespoons of lemon juice, 1 teaspoon of lemon zest, 1 teaspoon of black pepper, and 1 teaspoon of garlic powder.

  2. 11

    Chill

Cover and refrigerate the aioli for at least 30 minutes to let the flavors meld.
