Method

Crust Preparation

  1. 1

    Prepare the Crust

In a mixing bowl, combine the graham cracker crumbs, granulated sugar, melted butter, and salt. Mix until well combined and crumbly.

  2. 2

    Form the Crust

Press the crumb mixture into the bottom of a 9-inch springform pan, making sure to pack it tightly. Use the back of a measuring cup or your fingers to create an even layer.

  3. 3

    Bake the Crust

Preheat the oven to 350°F (175°C). Bake the crust for about 10 minutes, or until lightly golden. Remove from oven and let it cool completely.

Filling Preparation

  1. 4

    Mix the Cream Cheese

In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy, about 2-3 minutes.

  2. 5

    Add Sugar and Sour Cream

Add the granulated sugar and sour cream to the cream cheese and mix until well blended.

  3. 6

    Incorporate Vanilla and Eggs

Add the vanilla extract and eggs one at a time, mixing well after each addition until fully incorporated.

  4. 7

    Add Mango Puree

Gently fold in the fresh mango puree until evenly distributed throughout the mixture.

  5. 8

    Pour Filling into Crust

Pour the mango cheesecake filling into the cooled crust, smoothing the top with a spatula.

  6. 9

    Bake the Cheesecake

Bake in the preheated oven for 45-50 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for another hour to cool gradually.

  7. 10

    Chill the Cheesecake

Remove from the oven and let cool to room temperature. Then refrigerate for at least 4 hours, preferably overnight.

Topping Preparation

  1. 11

    Prepare the Topping

Before serving, arrange fresh mango slices on top of the chilled cheesecake.

  2. 12

    Garnish

Garnish with fresh mint leaves for an added touch of freshness.
