Lobster Salad Preparation

    Cook the Lobster

    In a large pot of boiling salted water, cook the lobster for about 8-10 minutes until the shell turns bright red. Remove from water and let cool.

    Prepare the Lobster Meat

    Once the lobster is cool enough to handle, remove the meat from the claws and tail. Cut into bite-sized pieces and place in a mixing bowl.

    Make the Salad

    Add mayonnaise, diced celery, lemon juice, chopped chives, salt, and black pepper to the lobster meat. Gently fold the mixture together until well combined. Set aside.

Bun Preparation

    Grill the Buns

    Melt the unsalted butter in a small bowl. Brush the inside of each New England style bun with melted butter. Preheat a grill or skillet over medium heat and grill the buns for 1-2 minutes, or until golden brown.

Potato Chips Preparation

    Slice the Potatoes

    Thinly slice the Kennebec potatoes using a mandoline or sharp knife. Rinse the slices in cold water and pat them dry with paper towels.

    Fry the Chips

    In a large pot, heat vegetable oil to 350°F (175°C). Fry the potato slices in batches for about 3-4 minutes, or until golden and crispy. Remove from oil and drain on paper towels. Season with salt to taste.
