Salad Preparation

Prepare the Lobster
If using whole lobsters, steam or boil them according to your preference. Once cooked, remove the meat from the shell and chop it into bite-sized pieces. Measure out 1 cup of the lobster meat for the salad.

Prepare the Vegetables
Wash the Boston Bibb lettuce leaves thoroughly and gently pat them dry with a paper towel. Dice the tomato and avocado into small cubes.

Assemble the Salad
In a large mixing bowl, combine the chopped lobster meat, diced tomato, and diced avocado. Gently toss to incorporate the ingredients.

Add the Lettuce
Add the Boston Bibb lettuce leaves to the mixing bowl and gently toss again to combine, being careful not to bruise the lettuce.

Make the Dressing
In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and freshly ground black pepper until the mixture is well combined and emulsified.

Drizzle the dressing over the assembled salad and toss gently to coat all ingredients evenly with the dressing.
