    Rinse the littleneck clams or Mediterranean mussels under cold running water to remove any sand or debris. Discard any that are open and do not close when tapped.

Cooking

    In a large pot or deep skillet, heat the olive oil over medium heat. Add the minced garlic and chopped shallots, and sauté until fragrant and translucent, about 2-3 minutes.
