Method
Lemon Lava Cake Blondie Directions
- 1
Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.
- 2
Melt the Butter
In a medium saucepan, melt the unsalted butter over low heat until completely melted. Remove from heat and let cool slightly.
- 3
Mix Sugars and Eggs
In a large mixing bowl, combine the melted butter, granulated sugar, and brown sugar. Stir until well combined. Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.
- 4
Combine Dry Ingredients
In a separate bowl, whisk together the all-purpose flour, baking powder, salt, lemon zest, and lemon juice. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- 5
Add Chocolate Chips
Gently fold in the white chocolate chips until evenly distributed.
- 6
Bake the Blondies
Pour the batter into the prepared baking pan and spread it evenly. Bake in the preheated oven for about 25-30 minutes, or until the edges are set and a toothpick inserted into the center comes out with a few moist crumbs.
- 7
Raspberry Sauce Directions
- 8
Prepare the Sauce
In a small saucepan, combine the fresh raspberries, granulated sugar, and water. Cook over medium heat, stirring gently until the raspberries break down and the mixture begins to thicken, about 5-7 minutes.

Finish the Sauce
Remove from heat and stir in the lemon juice. Allow the sauce to cool slightly before serving.
