Pecan Praline

    Prepare the Praline

    In a saucepan over medium heat, combine the pecans, sugar, and butter. Stir constantly until the sugar melts and the mixture turns a light amber color.

    Cool the Praline

    Pour the mixture onto a parchment-lined baking sheet and spread it out evenly. Let it cool completely before breaking it into pieces.

    Preheat the Oven

    Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Make the Batter

    In a bowl, beat the eggs and sugar together until pale and fluffy. Add the vanilla extract, flour, and baking powder, and mix until just combined.

    Shape the Lady Fingers

    Spoon the batter into a piping bag and pipe 3-inch long strips onto the prepared baking sheet.
