Method

Gelato Base

    Prepare the Milk Mixture

    In a saucepan, combine the whole milk, heavy cream, and granulated sugar. Heat over medium heat until the mixture is warm and the sugar dissolves, but do not let it boil.

    Whisk Egg Yolks

    In a separate bowl, whisk the egg yolks until they are light and frothy. Gradually add a small amount of the warm milk mixture to the yolks while whisking to temper them.

    Combine Mixtures

    Pour the tempered egg yolk mixture back into the saucepan with the milk mixture. Stir continuously over low heat until the mixture thickens and coats the back of a spoon.

    Add Vanilla

    Split the vanilla bean lengthwise, scrape out the seeds, and add the seeds and the pod to the mixture. Remove from heat and allow to cool. Once cooled, strain the mixture to remove the vanilla pod.

    Chill Mixture

    Refrigerate the gelato base for at least 4 hours, or overnight for best results.

Salted Caramel

    Make Caramel

    In a saucepan over medium heat, combine the granulated sugar. Allow it to melt without stirring, gently swirling the pan occasionally.

    Add Butter

    Once the sugar is completely melted and has turned a golden amber color, add the butter and whisk until it is fully melted and combined.

    Incorporate Cream

    Slowly pour in the heavy cream while whisking continuously. Be careful as the mixture will bubble vigorously.

    Finish with Salt

    Remove from heat and stir in the sea salt. Allow the caramel to cool before folding it into the chilled gelato base.

Strawberry Sorbetto

    Prepare Strawberries

    Wash and hull the strawberries, then blend them in a food processor until smooth.

    Mix Ingredients

    In a bowl, combine the strawberry puree, granulated sugar, and lemon juice. Stir until the sugar is dissolved.

    Chill Mixture

    Refrigerate the mixture for at least 1 hour to ensure it is chilled before churning.

    Churn Sorbetto

    Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Freeze

    Transfer the sorbetto to an airtight container and freeze for at least 4 hours before serving.

Blood Orange Sorbetto

    Prepare Blood Oranges

    Juice the blood oranges and strain the juice to remove any seeds. You should have about 1 cup of juice.

    In a bowl, combine the blood orange juice, granulated sugar, and lemon juice. Stir until the sugar is dissolved.

    Refrigerate the mixture for at least 1 hour to ensure it is chilled before churning.
