Preparing the Fish Sticks

Preheat the Oven
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

Prepare the Fish
Cut the pollock fillets into sticks, about 1 inch wide and 3-4 inches long.

Set Up Breading Station
In three separate shallow dishes, place the flour, beaten eggs, and breadcrumbs mixed with salt, black pepper, and paprika.

Bread the Fish
Coat each fish stick in flour, dip it in the egg, and then roll it in the breadcrumb mixture until evenly coated.

Arrange on Baking Sheet
Place the breaded fish sticks on the prepared baking sheet. Drizzle with olive oil on top.

Bake the Fish Sticks
Bake in the preheated oven for about 15-20 minutes, or until golden brown and cooked through, flipping halfway through.

While the fish is baking, peel, core, and slice the fresh pineapple into bite-sized pieces.

Once the fish sticks are golden and crispy, remove them from the oven and let them cool slightly before serving.

Serve the fish sticks with sweet pineapple pieces on the side and your choice of tartar sauce or ketchup for dipping.
