    Thoroughly wash the Russet potatoes under cold water to remove any dirt. Peel the potatoes using a vegetable peeler.

    Cut the peeled potatoes into even strips, approximately 1/4 inch thick. To get uniform fries, try to keep the size consistent.

    Soak the Fries

    Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes for crisper fries.

Cooking

    Heat the Oil

    In a deep fryer or large heavy pot, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

    Dry the Fries

    After soaking, drain the fries and pat them dry with paper towels to remove excess moisture. This step prevents the oil from splattering.
