    Melt the Chocolate

    Chop the dark chocolate into small pieces and place them in a heatproof bowl. In a small saucepan, heat the heavy cream until it just begins to boil, then pour it over the chopped chocolate. Let it sit for about 2 minutes, then stir until smooth and fully combined.

    Prepare the Apricots

    Finely chop the brandied apricots and fold them into the chocolate mixture. Ensure they are evenly distributed throughout the mixture.

    Chill the Mixture

    Cover the bowl with plastic wrap and refrigerate for at least 2 hours or until the mixture is firm enough to handle.

    Form the Truffles

    Once chilled, use a small scoop or spoon to portion out the chocolate mixture. Roll each portion into a ball using your hands.

    Coat the Truffles

    Roll each truffle in cocoa powder until fully coated. Place them on a parchment-lined baking sheet.

    Whip the Cream

    In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Using a hand mixer or whisk, beat the mixture until soft peaks form. Be careful not to over-whip.

Candied Orange Peel

    Prepare the Orange Peel

    Using a vegetable peeler, remove the peel from the orange in long strips, avoiding the bitter white pith as much as possible.

    Candy the Peel

    In a saucepan, combine the orange peel, water, and granulated sugar. Bring to a simmer over medium heat and cook until the peel is translucent and the syrup thickens, about 15-20 minutes. Remove from heat and let it cool.

    Once cool, chop the candied orange peel into small pieces and store in an airtight container until ready to use.
