Method

To Make the Mousse

    Melt the Chocolate

    In a heatproof bowl, melt the dark chocolate over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.

    Prepare the Egg Mixture

    In a separate bowl, whisk the eggs and granulated sugar together until pale and thick. This should take about 5 minutes.

    Combine Chocolate and Egg Mixture

    Gently fold the melted chocolate into the egg mixture until fully combined.

    Whip the Cream

    In a large bowl, whip 300ml of heavy cream with a pinch of salt and vanilla extract until soft peaks form.

    Fold Cream into Chocolate Mixture

    Gently fold the whipped cream into the chocolate mixture until no streaks remain. Be careful not to deflate the mixture.

    Chill the Mousse

    Spoon the mousse into serving cups or bowls and refrigerate for at least 2 hours until set.

To Make the Whipped Cream

    Whip the Cream

    In a clean bowl, whip the 200ml of heavy cream with the powdered sugar and vanilla extract until stiff peaks form.

    Serve

    Once the mousse has set, top each serving with a dollop of whipped cream before serving.
