Prepare Mahi Mahi

Marinate the Fish
In a bowl, combine olive oil, salt, black pepper, and lime juice. Rub this mixture over the mahi mahi fillets and let them marinate for about 15 minutes.

Grill the Fish
Preheat the grill to medium-high heat. Place the marinated mahi mahi fillets on the grill and cook for about 4-5 minutes per side, or until the fish is opaque and flakes easily with a fork.

Cook the Rice
Rinse the jasmine rice under cold water until the water runs clear. In a saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the water is absorbed.

Add Miso and Green Onions
In a small bowl, mix the miso paste with a few tablespoons of warm water to dissolve it. Once the rice is cooked, remove from heat and stir in the dissolved miso and chopped green onions. Fluff the rice with a fork and set aside.

Season the Salad
Season the salad with salt and black pepper to taste. Toss gently to combine all ingredients.
