Method

Prepare the Clams

    Clean the Clams

    Rinse the fresh clams under cold water to remove any sand or dirt. Soak them in a bowl of water with a little salt for about 30 minutes, then rinse again.

    Cook the Clams

    In a large pot, bring about 2 inches of water to a boil. Add the cleaned clams and cover. Steam the clams for about 5-7 minutes or until they open up. Discard any clams that do not open. Remove the clams from the pot and let them cool slightly.

Make the Bacon-Garlic-Bell Pepper Butter

    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Remove the bacon and place it on paper towels to drain. Once cooled, chop into small pieces.

    Sauté Garlic and Bell Pepper

    In the same skillet with the bacon grease, add the minced garlic and diced bell pepper. Sauté for about 3-4 minutes until softened.

    Combine Ingredients

    In a bowl, mix together the cooked bacon, sautéed garlic and bell pepper, softened butter, lemon juice, chopped parsley, salt, and black pepper. Stir well until combined.

Assemble and Bake

    Stuff the Clams

    Preheat your oven to 375°F (190°C). Open each clam shell and place the clam meat back in its shell. Spoon a generous amount of the bacon-garlic-bell pepper butter on top of each clam.

    Add Toppings

    Sprinkle bread crumbs and grated Parmesan cheese over the buttered clams.

    Bake the Clams

    Place the stuffed clams on a baking sheet and bake in the preheated oven for about 15-20 minutes, or until golden brown and bubbly on top.
